The catering company is celebrating its platinum anniversary this year and Craig Pellis, who lives in Mount Kisco, couldn't be happier.

"It's very exciting," Pellis said. "I love working with the local community. I like dealing with the businesses in town, whether it be catering for the dance studio across the street or doing something for the bike store."

Pellis has been in business for so long that he's done someone's Bar Mitzvah, only to be called back years later and asked to do their wedding.

Before starting his own catering company, Pellis worked in a lot of restaurants, but he had the desire to do something entrepreneurial.

"I wanted to have a life," Pellis said. "This allowed me to take a weekend off if I wanted to take a weekend off. When you open a restaurant, you're stuck with it 24-7. This gives you a little more flexibility."

Pellis said many of his clients appreciate the personalized service he offers, often getting the same people who serve each party. Each event brings something new.

"Every week can be a different home, synagogue or park," Pellis said. "Some sites have a place where we can work while other sites have absolutely nothing and you have to build it from scratch. Our reputation is based on being able to take on whatever venue we have. We're a restaurant on wheels."

A lot of planning is involved each week, from working with rental companies to hoping for cooperation from Mother Nature. Though Pellis is trained as a French chef, each week can bring a new cooking style and a new menu.

"You have to be ready for anything," Pellis said.
