Where once folks cringed at the thought of raw fish, now they crave it with Westchester County diners putting spicy salmon rolls and yellowtail scallion high on their list of “must haves.”

We asked – and you answered – giving us five of your favorite sushi restaurants. Grab your chopsticks and read below; each eatery is being profiled this week with the winner announced at the end of the month.

HIto Japanese, 26 Main St, Mt Kisco, (914) 241-8488

What Makes It Good: Fresh sushi and a chef trained in Japan.

Diners Like: Its artful and authentic presentation. Dragon rolls get high marks as do the chef's specialty rolls, the salmon lovers roll and the Tomo roll, according to Manager Jian Lin.

Worth Special Mention: Diners on Yelp and OpenTable like its sophistication within a casual setting.
